Umeboshi vinegar is not a true vinegar, but the naturally sour-salty liquid that is drained off the fermented kegs of umeboshi plums. Mitoku traditional Umeboshi Vinegar uses only wild plums grown in remote mountain areas that have never come in contact with chemical sprays. They are hand-picked and hand-pickled with shiso leaves and sea salt in a traditional manner. After the plums are pickled, the tart and salty liquid, umeboshi “vinegar,” is separated and bottled.
