8 oz. Mitoku Premium Donko Shiitake
(Reference #DF013)
Price:
$42.99
A favorite ingredient in macrobiotic dishes and more nutritious than common button mushrooms, shiitake contain all eight amino acids in a ratio similar to the ideal protein for human nutrition. They are rich in leucine and lysine, which is deficient in many grains, and provide B vitamins. Scientific studies show that shiitake can reduce serum cholesterol and have anti-viral and anti-tumor properties. A delicacy in Japan, shiitake mushrooms are grown on hardwood logs in Japanese forests, and hand-harvested and sun-dried. Prized for their woodsy, almost smoked flavor, they add gourmet flavor to most foods they are combined with. Donko shiitake are the most valued for their superb flavor and healing qualities. The Donko has a thick, small, tightly curled cap, concentrating their flavor and energy. Enjoy shiitake in soups, stews, noodle broths, vegetable and grain dishes, sauces, gravies, casseroles and teas.

Recent medical studies on the Maitake mushroom (also known as hen of the woods) have shown it to have a wide range of medicinal properties. It has been found to be an effective anti-tumor agent for some forms of cancermore than double that of the strongest chemical drugsand to mitigate some chemotherapy side effects. Both Japanese and U.S. researchers have confirmed its ability to prevent HIV-infected Tcells from being destroyed, to increase the number of helper Tcells, and in some cases, to provoke a reversal of the disease. Studies also have found Maitake effective in lowering high blood pressure and, for diabetes, it has been effective in decreasing levels of blood glucose, blood serum insulin and blood serum triglycerides.
