Jinenjo is a wild mountain yam or potato that grows in Japan. Not related to the common potato which is very starchy and acid-producing, Jinenjo is highly regarded for its strength and vitality producing effects. Jinenjo potatoes are dried, powdered and mixed with buckwheat flour and sifted wheat flour, producing a light and slightly slippery texture.
